THE OTHER NIGHT I COOKED SOME SPANISH MAKERAL IN JAPANESE BREAD CRUMBS AND SERVED IT WITH A HOMEMADE TOMATO SAUCE.
THE SAUCE INCLUDED THE FOLLOWING INGREDIENTS BLENDED TOGETHER USING A KITCHEN WIZZ.
- 1 TIN OF WHOLE TOMATOES [JUST THE TOMATOES, NOT ALL OF THE LIQUID]
- 5 CLOVES GARLIC [CHOPPED]
- A GENEROUS HANDFUL OF CORIANDER [CHOPPED]
- 1 WHOLE CHILLI [CHOPPED]
- 1/3 CUP OF GOOD OLIVE OIL
- 1 TEASPOON OF SALT
- 1 TEASPOON OF FRESH GROUND BLACK PEPPER
ALSO, FOR AN AWESOME FISH BURGER USE THIS SAUCE, A FILLET OF GREAT FISH AND SOME CRUNCHY ICE BERG LETTUCE ! !
